Poke Sushi Stack with Radish Sprouts

INGREDIENTS

½ cup cauliflower rice, frozen

1 tsp vegetable oil

1 tsp salt

1 tsp black sesame seeds

½ Persian cucumber sliced and quartered

1/3 cup carrots, shredded

½ avocado, sliced thin

Sushi grade tuna and/or salmon cut into small squares

Salad Cosmo Radish Sprouts, for topping

 

INSTRUCTIONS

In a small skillet, heat oil until hot. Add cauliflower rice and cook until soft. Sprinkle with salt and set aside. In a cup or glass about 4” tall, sprinkle the bottom with sesame seeds. Next, layer the cucumber slices, carrots, ½ the avocado (making a flat layer) and your fish. Press down slightly. Continue with the rest of the avocado and finish with your cauliflower. Press down once more until compacted. Flip your glass over onto a plate and lift slowly. Garnish with your radish sprouts and enjoy with soy sauce or Sriracha!

Orange Chicken Tacos with Mung Bean Sprouts

INGREDIENTS

Sauce:

1 ½ cups water

2 tbsp orange juice

1/3 cup rice vinegar

2 tbsp soy sauce

1 tbsp orange zest

1 cup brown sugar, packed

½ tsp garlic, minced

3 tbsp cornstarch

Chicken:

2 boneless chicken breasts, cut into small pieces

3 eggs

1/3 cup all-purpose flour

1/3 cup cornstarch

¼ tsp salt

3 tbsp oil

1 tsp sesame seeds

Tacos:

4 corn tortillas, heated

1 ½ cup broccoli slaw with carrots and red cabbage

Chopped green onions

INSTRUCTIONS

Pour water, orange juice, lemon juice, rice vinegar, and soy sauce into a saucepan and set over medium-high heat. Stir in the orange zest, brown sugar, and garlic. Bring to a boil. Remove from heat, and cool 10 to 15 minutes. Set aside. combine flour, cornstarch and salt in a shallow dish. Next whisk eggs together in a bowl. Dip chicken pieces in egg then flour mixture then place on a plate. Fry orange pieces in oil until golden brown. Next, toss in sauce and heat through one more time over the stove. Sprinkle with sesame seeds and set aside. Assemble tacos by adding orange chicken, broccoli slaw, green onions and mung bean sprouts. Serve and enjoy!
